From Italy to Cuba: the Risotto
Risotto is a traditional Italian dish made with rice. It is originally from the north-western part of the country, from Piedmont and is one of the pillars of northern gastronomy in general. There are dissimilar varieties of risotto, but risotto ai frutti di mare: risotto with seafood, has become our specialty since we opened Elizalde Bar-Restaurante.
Our chef always gets carried away by his art and for the elaboration of the risotto he usually uses varieties of high quality rice, with a grain size between small and medium, due to the capacity of these rices to absorb liquid. This provides a pasty texture. The type of cheese used is Parmesan, because together with the crab and lobster they give the final touch to the dish. Although the chef has other secrets regarding risotto, referring to their spices and cooking time, but this he reserves them. Our bar measures 12m, being the largest in Old Havana. Varieties of wines and cocktails to give you a great delight.
Jaime Elizalde is a man from the area of Navarra. His family, in the decade of the 30s of the last century, had the opportunity to meet Ernest Hemingway, who taught everyone the passion for Cuba.
Years passed and until Jaime came that love for the largest of the Antilles. His motivation and his entrepreneurial spirit made him come to her and Havana received him with a hug.
His vision made him think of this bar-restaurant, a project he started in 2016 together with his wife and inspiration Yanaisi Albite. In June of 2017 the tables were ready, the kitchen was lit and from the 12th of the same month, our doors were opened for all those who wish to enjoy Spanish elegance and Cuban culture.
Currently Jaime, Yanaisi and his team, we hope to turn this place into that divine space where friends, families and co-workers come together. We want to be that place where our clients smile and enjoy those little moments that make us remember that we are alive.
